Pindang Serani Recipe

3 cloves garlic, sliced

3 red chilies, sliced

2 tomatoes, quartered

1 teaspoon salt

1 teaspoon sugar

2 tablespoons tamarind juice

1 bunch Thai basil

Cooking oil for sautéing

Instructions:

Preparation of Fish:

Clean and cut the fish into pieces. Rinse thoroughly and set aside.

Sautéing Aromatics:

Heat a little oil in a pan. Sauté shallots, garlic, and red chilies until fragrant.

Adding Herbs and Spices:

Add lemongrass, kaffir lime leaves, bay leaves, galangal, and ginger. Sauté for a few more minutes to release the aromas.

Cooking the Soup:

Add water and bring to a boil. Once boiling, add the fish pieces and tomatoes. Season with salt, sugar, and tamarind juice.
