Banana bolen is a popular Indonesian pastry made by wrapping bananas, chocolate, and sometimes cheese in a soft, flaky pastry dough. Originating from Bandung, Indonesia, this treat combines the sweetness of ripe bananas with the richness of chocolate and the slight saltiness of cheese, creating a unique and satisfying flavor.
It’s usually served as a snack or dessert, and it’s especially popular during gatherings and as a gift item. The texture is similar to a croissant or puff pastry, making it a delightful blend of crunchy and creamy in every bite.
For the Dough:
- 250 grams of all-purpose flour
- 100 grams of margarine
- 50 grams of butter
- 1/4 teaspoon of salt
- 100 ml of cold water
For the Filling:
- 3 ripe bananas, sliced
- 100 grams of chocolate chunks
- 50 grams of grated cheese
For the Egg Wash:
- 1 egg yolk, beaten
- 1 tablespoon of milk
Optional Garnish:
- Grated cheese or chocolate sprinkles (to taste)
Instructions:
1. Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour and salt.
- Add margarine and butter, mixing with your hands or a spatula until the mixture resembles coarse crumbs.
- Gradually add the cold water while kneading until it forms a smooth and pliable dough. Cover the dough with plastic wrap and let it rest in the refrigerator for 15-20 minutes.
2. Prepare the Filling:
- Slice the bananas into smaller pieces that will fit well inside the dough. Set aside.
- Prepare the chocolate chunks and grated cheese as filling ingredients.
3. Roll and Shape the Dough:
- After the dough has rested, divide it into small, equal portions (about the size of a golf ball).
- Take one portion of dough, roll it out with a rolling pin into a thin, rectangular shape.
- Place a few banana slices, chocolate chunks, and some grated cheese in the center of the dough.
4. Fold and Seal the Dough:
- Carefully fold the dough over the filling, wrapping it tightly to ensure the filling doesn’t leak out during baking.
- Gently press the edges to seal the dough, then shape it into a neat rectangular parcel.
- Repeat this process with the remaining dough and filling.
5. Apply the Egg Wash:
- Preheat your oven to 180°C (350°F).
- Arrange the prepared bolen on a baking tray lined with parchment paper.
- In a small bowl, beat the egg yolk with milk to make the egg wash.
- Brush the top of each bolen with the egg wash to give it a golden, glossy finish when baked.
6. Bake the Bolen:
- Place the tray in the preheated oven and bake for about 20-25 minutes or until the bolen turns golden brown.
7. Serve:
- Remove the bolen from the oven and let them cool slightly.
- Sprinkle additional grated cheese or chocolate sprinkles on top if desired.
Tips:
- Ensure the dough is rolled thinly, but not too thin, to prevent tearing.
- For extra flavor, you can sprinkle a bit of cinnamon on the banana slices before wrapping.
