Corn Fritters Recipe

Corn fritters, known as “bakwan jagung” in Indonesia, are a popular snack with a crisp outer layer and a sweet, juicy corn filling. They're perfect for a quick appetizer or a side dish. Here’s a simple recipe to make delicious corn fritters that yield about 10-12 pieces.



Ingredients:

- 1 cup of fresh corn kernels (or canned, drained corn)

- 1/2 cup of all-purpose flour

- 1/4 cup of rice flour (optional, for extra crispiness)

- 1 egg

- 1/4 cup of water (add gradually, as needed)

- 2 scallions, thinly sliced

- 2 cloves of garlic, finely minced

- 1/2 teaspoon of salt

- 1/4 teaspoon of pepper

- 1/4 teaspoon of sugar

- Oil for frying

Instructions:

1. Prepare the Ingredients:

   Begin by preparing all the ingredients. If using fresh corn, cut the kernels off the cob. If using canned corn, make sure to drain it thoroughly.

2. Mix the Batter:

   In a large mixing bowl, combine the all-purpose flour, rice flour (if using), salt, pepper, and sugar. Stir these dry ingredients together to make sure they’re evenly distributed.

3. Add Wet Ingredients:

   In a small bowl, beat the egg, then add it to the flour mixture. Gradually add water as needed until the batter reaches a thick, pancake-like consistency. It’s best to start with less water and add more if the batter is too thick.

4. Incorporate Corn and Flavorings:

   Add the corn kernels, sliced scallions, and minced garlic to the batter. Mix well to ensure the corn and seasonings are evenly spread throughout.

5. Prepare to Fry:

   Heat about an inch of oil in a skillet over medium heat. Test the oil by dropping a small bit of batter; if it sizzles and rises to the surface, the oil is ready.

6. Fry the Fritters:

   Carefully spoon 1-2 tablespoons of batter into the hot oil, forming each fritter into a small, round shape. Fry each side for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to turn the fritters halfway through cooking for even browning.

7. Drain and Serve:

   Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil. This will keep the fritters crispy.

8. Serve Warm:

   Serve the corn fritters warm with a dipping sauce, such as chili sauce, sweet soy sauce, or even a garlic aioli, for an added burst of flavor.

Tips:

- Make it Spicy: For a bit of heat, add a chopped red chili or chili powder to the batter.

- Crispier Fritters: Using rice flour helps make the fritters crispier. You can also add a teaspoon of baking powder to the batter for a lighter texture.

- Experiment with Herbs: Try adding chopped cilantro, parsley, or even dill for a unique twist.
