Burnt Cheesecake Recipe

This burnt cheesecake is rich, creamy, and irresistibly caramelized on the outside, making it a perfect dessert for any occasion.



Ingredients:

- 500 grams cream cheese, softened  

- 200 grams granulated sugar  

- 4 large eggs  

- 250 ml heavy cream  

- 1 teaspoon vanilla extract  

- 30 grams all-purpose flour  

- A pinch of salt  

Equipment

- 8-inch springform pan  

- Parchment paper  

- Oven  

Instructions:

1. Prepare the Pan:

   Preheat your oven to 210°C (410°F). Line the springform pan with parchment paper, ensuring the edges go above the rim to hold the batter as it rises.  

2. Make the Batter:

   - In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Use a hand mixer or whisk for even texture.  

   - Add the eggs, one at a time, mixing well after each addition. This ensures the batter remains smooth.  

   - Pour in the heavy cream and vanilla extract, then mix until fully incorporated.  

   - Sift in the flour and add the pinch of salt. Fold gently with a spatula until the mixture is well combined and lump-free.  

3. Bake the Cheesecake:

   - Pour the batter into the prepared pan. Gently tap the pan on the counter to release any air bubbles.  

   - Place the pan in the preheated oven and bake for 50–60 minutes or until the top is deep golden brown and slightly cracked. The center should still jiggle slightly when shaken.  

4. Cool the Cheesecake:

   - Once baked, remove the cheesecake from the oven and let it cool in the pan for about an hour. The cake will deflate slightly as it cools, creating its signature rustic look.  

   - Transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight, to allow it to set fully and enhance its flavor.  

5. Serve and Enjoy:

   - Carefully remove the cheesecake from the pan, peeling away the parchment paper.  

   - Slice into wedges and serve chilled or at room temperature.  

Tips:

- For a smokier flavor, bake the cheesecake slightly longer until the top is more charred, but watch closely to avoid burning.  

- Use room-temperature ingredients for a smoother batter.  

- Pair the cheesecake with fresh fruits, whipped cream, or a drizzle of honey for added flavor.
