Fried Kwetiau Recipe

Fried Kwetiau is a popular Southeast Asian dish made from stir-fried flat rice noodles. This flavorful dish is a favorite in many homes and street food stalls due to its rich taste and simple preparation. Below is a detailed recipe for making delicious Fried Kwetiau at home.



Ingredients

For the Kwetiau Noodles:

300 grams flat rice noodles (fresh or dried)

3 tablespoons cooking oil


Protein and Vegetables:

150 grams chicken breast or shrimp (optional, sliced or cleaned)

2 eggs (lightly beaten)

1 cup Chinese mustard greens or bok choy (chopped)


For the Sauce:

3 tablespoons sweet soy sauce (kecap manis)

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 teaspoon sugar

A pinch of salt and white pepper


Aromatics:

3 cloves garlic (minced)

2 shallots (sliced thinly)

1 red chili (optional, sliced for spice)


Instructions

1. Prepare the Noodles:

If using dried noodles, soak them in hot water for 5-10 minutes until softened. Drain and set aside. If using fresh noodles, rinse them with warm water to separate the strands.

2. Prepare the Sauce:

In a small bowl, mix sweet soy sauce, soy sauce, oyster sauce, sesame oil, sugar, salt, and white pepper. Stir well until combined. Set aside.

3. Cook the Protein:

Heat 1 tablespoon of cooking oil in a wok or large skillet over medium heat. Add the chicken or shrimp and stir-fry until fully cooked. Remove from the pan and set aside.

4. Cook the Eggs:

Add another tablespoon of oil to the wok. Pour in the beaten eggs and scramble until just set. Remove and set aside.

5. Sauté Aromatics:

Add the remaining oil to the wok. Sauté the garlic, shallots, and chili (if using) until fragrant, about 30 seconds.

6. Add Vegetables:

Toss in the carrot and mustard greens. Stir-fry for 2-3 minutes until slightly tender.

7. Combine Ingredients:

Return the cooked protein and scrambled eggs to the wok. Add the noodles and pour the prepared sauce over them. Mix everything gently but thoroughly, ensuring the noodles are well-coated with the sauce.

8. Finish Cooking:

Add the bean sprouts and stir-fry for another minute. Adjust seasoning to taste if needed.

9. Serve:

Transfer the Fried Kwetiau to a serving plate. Garnish with fried shallots and serve with lime wedges on the side.


Tips

-  To achieve a smoky flavor, cook the dish on high heat and stir quickly.

-  Customize the protein by using tofu, beef, or even mushrooms for a vegetarian version.
