Ingredients
For the Dimsum:
200 grams of chicken breast, finely minced
100 grams of shrimp, peeled and finely minced
50 grams of tapioca flour
1 egg white
2 cloves of garlic, minced
1 tablespoon of oyster sauce
1 tablespoon of soy sauce
1 teaspoon of sesame oil
1/2 teaspoon of salt
1/4 teaspoon of white pepper
Wonton wrappers
For the Mentai Sauce:
3 tablespoons of mayonnaise
1 tablespoon of chili sauce (adjust to taste)
1 teaspoon of tomato sauce
1 teaspoon of sesame oil
1/2 teaspoon of sugar
Instructions
A. Prepare the Dimsum Filling:
1. In a large mixing bowl, combine the minced chicken, shrimp, and tapioca flour.
2. Add the egg white, garlic, oyster sauce, soy sauce, sesame oil, salt, and white pepper. Mix well until the mixture is smooth and sticky.
B. Assemble the Dimsum:
1. Take a wonton wrapper and place a small spoonful of the filling in the center.
2. Fold the edges of the wrapper upwards to form a cup shape, leaving the top open. Gently press the edges to hold the shape.
3. Repeat with the remaining wrappers and filling.
C. Steam the Dimsum:
1. Line a steamer with parchment paper or lightly grease it to prevent sticking.
2. Place the dimsum in the steamer, leaving some space between each piece.
3. Steam over medium heat for 15–20 minutes, or until fully cooked.
D. Make the Mentai Sauce:
1. In a small bowl, mix mayonnaise, chili sauce, tomato sauce, sesame oil, and sugar until smooth.
2. Adjust the level of chili sauce to suit your preference for spiciness.
E. Assemble and Bake:
1. Preheat your oven to 180°C (356°F).
2. Arrange the steamed dimsum in an oven-safe dish. Spoon the mentai sauce generously over the top of each dimsum.
3. Bake for 5–7 minutes until the sauce is slightly golden and bubbly.
F. Serve:
1. Remove the dimsum from the oven and let it cool for a minute.
2. Garnish with chopped spring onions or nori strips, if desired.
3. Serve warm and enjoy your homemade Dimsum Mentai!
Tips:
If you don’t have an oven, you can use a blowtorch to achieve the same effect on the mentai sauce.
For a more vibrant flavor, add a bit of lime juice to the mentai sauce.
Dimsum can be frozen before steaming for meal prep. Steam directly from frozen for 20–25 minutes.
This recipe is perfect for dimsum lovers looking to try something unique. The creamy, spicy mentai sauce complements the savory dimsum beautifully, making it a crowd-pleasing dish for any occasion!
