Fried Vermicelli Recipe

Fried vermicelli is a versatile and delicious dish that can be customized with various ingredients to suit your taste. Enjoy this flavorful and satisfying meal for lunch or dinner!




Ingredients:
200 grams of vermicelli noodles
2 tablespoons of vegetable oil
3 cloves of garlic, finely chopped
1 onion, thinly sliced
100 grams of shrimp, peeled and deveined
100 grams of chicken breast, thinly sliced
1 carrot, julienned
100 grams of cabbage, shredded
2 tablespoons of soy sauce
1 tablespoon of oyster sauce
1 tablespoon of sweet soy sauce (kecap manis)
1 teaspoon of sesame oil
Salt and pepper to taste
2 eggs, beaten
2 green onions, chopped
1 red chili, sliced (optional)
Lime wedges for serving

Instructions:

Prepare the Vermicelli:

Soak the vermicelli noodles in hot water for about 5-7 minutes until they become soft. Drain and set aside.

Cook the Eggs:

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Pour in the beaten eggs and cook, stirring frequently, until they are scrambled and fully cooked. Remove the eggs from the pan and set aside.

Sauté the Aromatics:

In the same pan, add another tablespoon of vegetable oil. Sauté the garlic and onion until they become fragrant and translucent.

Add the Protein:

Add the shrimp and chicken slices to the pan. Stir-fry until they are cooked through, about 3-4 minutes.

Cook the Vegetables:

Add the julienned carrot and shredded cabbage to the pan. Stir-fry for another 2-3 minutes until the vegetables are tender yet still crisp.

Combine Ingredients:

Add the drained vermicelli noodles to the pan. Pour in the soy sauce, oyster sauce, sweet soy sauce, and sesame oil. Toss everything together until the noodles are well coated with the sauce and heated through.

Season and Garnish:

Season with salt and pepper to taste. Add the cooked scrambled eggs back into the pan, mixing them with the noodles. Garnish with chopped green onions and sliced red chili if using.

Serve:

Serve the fried vermicelli hot with lime wedges on the side for an extra burst of freshness.

Tips:

Noodle Texture: Make sure not to over-soak the vermicelli noodles; they should be soft but not mushy.

Protein Variations: You can substitute the shrimp and chicken with other proteins like beef, pork, or tofu.

Vegetable Choices: Feel free to add other vegetables such as bell peppers, bean sprouts, or mushrooms according to your preference.

Flavor Enhancements: Adding a dash of fish sauce or a squeeze of lime juice can elevate the flavors of the dish.
